So, this is a long time coming, but a while back Nate and I made some pumpkin pies out of pie pumpkins and we took some photos to document it. The pies were a little stringy, but otherwise quite tasty.

Once when I was a kid my mom told us that she could use squash, rutabagas or green beans and make a pie that tasted just like pumpkin. We rebelled at the idea of rutabaga or green bean but could kind of see squash as ok because it was the same color. Well, several months later she served this great pumpkin pie and after most of us had asked for a second piece she got this wry smile on her face and said, "See, I told you so."
I remember that pie! So fun!

Oh, and Naomi, please post your mom's green-bean/squash/rutabaga pumpkin pie recipes! These intrigue me.
